Why it still exists
Large amounts. Card refunds cap out, wallets have tier limits, and Interac has a per transfer ceiling that a five figure cashout will hit. A wire has no practical ceiling, so above a certain size the casino will move you onto it whether or not you asked.
Below that size it is the option you take when every other one has failed.
The fee is charged twice
The casino side runs C$10 to C$25 in this set. Your own bank then charges an incoming wire fee, typically C$10 to C$20 at the Canadian majors, and neither party mentions the other. On a C$150 withdrawal you can lose a quarter of it to two fees for the privilege of waiting a week.
The C$100 minimum out at least keeps the very worst cases off the table.
When you are forced onto it
Ask support to split the payment across two Interac transfers instead. Many sites will do it and simply do not offer it up front. Same money, one day, no fee.
